How to Brew with CO2 Extract

There are several methods for dosing CO₂ hop extract successfully. Two common methods include adding an open or perforated tin to a grant during runoff or mixing it with hot water or wort in a secondary vessel and pouring the resulting mixture into the kettle for boiling. The alpha acids in CO₂ hop extract are not isomerized until they are boiled during the kettle brewing process.

Kettle Brewing

The kettle is the best place to use CO₂ Extract. Add it to the kettle during pre-boil run off or use as an early boil addition. Early kettle additions are usually used to achieve the bulk of bittering and can reduce kettle foam formation and trub.
Whirlpool

Post-Boil/Whirlpool

You may add CO₂ hop extract late to the whirlpool for variety-specific flavor and aroma contributions. Please note that late whirlpool additions reduce isomerization time, reducing alpha acid utilization.
Dry hopping

Active Fermentation Dry Hop

CO₂ hop extract is not recommended for use in the fermenter. For active fermentation dry hop additions, T-90 pellets, Cryo Hops®, or HyperBoost® are your best options. Use our Product Use Matrix as quick reference for best use applications.
Fermentation

Post Fermentation Dry Hop

CO₂ hop extract is not recommended for use in the fermenter. For post-fermentation dry hop additions, T-90 pellets, Cryo Hops, or HyperBoost are your best options. Use our Product Use Matrix as a quick reference for best use applications.

Frequently Asked Questions

CO₂ hop extract is intended for bittering and is best used exclusively on the hot side for isomerization. For aromatic additions in the fermenter, we suggest T-90 pellets, Cryo Hops, or HyperBoost.
